Manufacture of Oolong tea
The home of the Oolong Tee are China and Taiwan. In the meantime, excellent oolongs are also manufactured in Thailand or even New Zealand. The freshly picked leaves basically run through the same steps as with black tea. Nevertheless, the production of Oolong is much more complex and requires the greatest care and experience.
The tea leaves are only gently rolled and only partially broken during the oolong tea. As a result, only a small proportion of the tea leaf fermented, which makes the difference to black tea. Depending on the intensity of the processing, the oxidative proportion of leaves changes and the Oolong tea gets depending on the one character that is more reminiscent of black or green tea. In terms of taste, Oolong Tees are usually milder and gentler.
Oolong teas should be brewed at a water temperature of 85-90 ° C (leaving the water standing for about a minute after cooking in the kettle). The optimal duration of this tea variety is 3 - 4 min.
